All kind of photo tecniques would be very interesting to learn ** (especially from you, because I'm already sure you can do it all well XD)

I am particularly interested in enhancing colours and light/shadow contrasts in photography, without using Photoshop. I can create effects with photomanipulation, but I would be more satisfied If I'm able to catch them with only my eye and my camera.

Oops..! I see you don't manipulate hair in any of your photomanipulations.
I'll go with photo retouching in that case :D

I am very interested in how to enhance contrast in photos...
like a sky/lake photo, there seems to be ways to really make elite adjustments to the contrast..??

Probably using seperate layers of adjustment, the problem I have with photos with large amounts of sky in is that adding contrast tends to wash out the sky.

Texture: I have huge difficulties with them because I like the "natural" outcome and I think they alter the photos too much. On the other hand, there is some work which requires it. Maybe learning different techniques would help.

 They can look overdone, I think it's partly to do with the texture its self as well as how you use them.
